Fish Monger - 5-Star Luxury Hotel

Apt Resources is pleased to offer an exciting opportunity for an experienced Fish Monger to join a prestigious 5-star luxury hotel in the Red Sea, Saudi Arabia. This role is responsible for receiving, inspecting, cleaning, filleting, portioning, and preparing a variety of fresh seafood while maintaining the highest standards of quality, hygiene, and food safety. The ideal candidate will have excellent knife skills, extensive seafood knowledge, and a commitment to delivering premium products that support exceptional dining experiences.

Responsibilities

• Receive, inspect, and verify the quality and freshness of all seafood deliveries.
• Clean, scale, gut, fillet, skin, debone, and portion a variety of fish and seafood according to kitchen requirements.
• Ensure seafood is properly stored, labeled, and rotated following FIFO procedures.
• Maintain cleanliness and sanitation of the fish preparation area, tools, and equipment.
• Follow HACCP, food safety, and hygiene standards at all times.
• Collaborate with chefs to prepare seafood according to menu specifications and operational needs.
• Minimize product waste through proper handling and portion control.
• Monitor seafood inventory and assist with stock control and ordering requirements.
• Maintain all cutting tools and equipment in safe working condition.
• Support the kitchen team to ensure smooth daily operations.

Requirements

Minimum of 3 years of experience as a Fish Monger, Seafood Butcher, or Fish Cutter in a 5-star hotel, luxury resort, or high-end seafood establishment.

Strong knowledge of seafood species, handling, storage, and preparation techniques.

Excellent knife skills, including filleting, deboning, and portioning various types of fish.

Good understanding of HACCP, food safety, and hygiene regulations.

Ability to work efficiently in a fast-paced kitchen environment.

Strong attention to detail and commitment to maintaining high-quality standards.

Good teamwork and communication skills.

Flexibility to work various shifts, including weekends and holidays.

Must be currently in the UAE.
